    Just made myself some Swedish Oven Baked Pancakes....first time so they're a bit ugly, but I love this recipe

    easy too

    3 eggs 2Tbsp. sugar
    2 c. Milk 1 c. flour
    3/4 tsp. salt

    Heat oven to 370. Cut three strips of bacon into pieces and put in bottom of 9.13 inch pan. Sitck into oven to brown, then beat all the preceding together in order given Remove pan from oven. Add mixture and bake again for 30 minutes. Serve with butter and syrup

    Note: In oven, this will rise like a souffle, but will fall after it's taken out of the oven.

    8 potatoes, peeled and cut into 1/8" slices salt and white pepper to taste 2-1/2 cups heavy whipping cream 3 Tbsp. Dijon mustard 3 garlic cloves, minced 3 Tbsp. butter 1/3 cup grated Parmesan cheese



    Layer sliced potatoes in a 9x13" glass baking dish and season with salt and white pepper. Combine cream, mustard, garlic, and butter in heavy saucepan and heat just to the boiling point. Pour over potatoes. Cover and bake at 350 degrees for 1 hour. Remove cover and evenly top with Parmesan cheese. Bake 30 minutes longer or until cheese is golden brown and potatoes are tender. Serve immediately.

          Crock Pot all day on low.

          Place in pot a Pork Loin, a whole sliced up onion (or two, if you like the onion) and bathe it in Mojo (can usually be found in grocery stores in the latin section, if not you can get it a a latino market). Let that simmer all day.

          Near dinner cook up some jasmine rice and black beans.

          Make bed of rice on plate. Put beans on rice, then pork on top of that, then top with a fat dollop of sour cream. Cuban Roast pork made easy.

            fill with Scotch of choice
            drink and let someone else cook

            Also here's a recipe for the Cheesy Corn Bake SmokeStack has.

            2 tablespoons butter
            4 teaspoons all-purpose flour
            1/8 teaspoon garlic powder
            3/4 cup milk
            6 ounces sharp American cheese; shredded (1.5 cups)
            1 package cream cheese (3 oz)
            3 packages frozen whole kernel corn (10 oz eac; thawed
            3 ounces diced ham

            In a large sauce pan, melt butter. Stir in flour and garlic powder. Add milk all at once. Cook and stir over medium heat until thickened and bubbly. Stir in cheeses. Cook and stir over medium heat until melted. Stir in the corn and ham. Transfer mixture to a 2-quart casserole dish. Bake at 350F for 45 minutes

              this is in the oven right now:

              salted, browned chicken parts (thighs mostly)
              dozen shallots, halved
              dozen garlic cloves
              herbs de provence
              fresh garden herbs (thyme, rosemary, parsley)
              cored and quartered apple (fuji)
              olive oil
              pepper
              bake for 2 hours at 300

                This sounds awesome but I bet it would be even better if you made the mojo yourself (which really isn't that hard). Just juice up an orchard of limes, oranges, a few lemons, and a grapefruit or two...then add in a shit ton of cumin and garlic and some onions and green peppers.

                I know all this because I am more Cuban than Jefe.

                  I cook the shit out of The Pioneer Woman's recipes. I've never made anything bad that I've tried out of there. In a similar vein, Trisha Yearwood's cookbook is supposed to be the bomb as well.

                  On Fri. I did

                  Sausage stuffed mushrooms
                  Firecracker Shrimp, really easy.
                  Pico
                  Guac
                  Oven Roasted Tenderloin
                  Mini-Cheesecakes
                  Cake Balls (likely mine ended up in there).

                        made Manicotti tonight for the lady....is there an good/easy way to do this...I resorted to holding up the shell and "packing" it in with a spoon

                          It depends on the filling, if it's just a cheese/ricotta blend, I would put it in a disposable pastry bag. A big ziplock bag with one corner cut off would work just as well.

                              Crock Pot:

                              4 Chicken Breasts
                              1 Can Corn
                              1 Can Black Beans
                              Jar of Salsa
                              Salt & pepper to taste
                              1tsp. Cumin
                              8oz of Cream Cheese

                              Add chicken, beans, corn and salsa to crock pot. Cook 4-6 Hours on High (Stir Occasionally)

                              When chicken is cooked through, remove from crock pot; cut chicken into chunks or shred, and put back in crock pot. Add seasoning to taste, and stir all ingredients together, then add cream cheese to top. Cook 25-30 minutes longer until cheese melts, stir again and serve.

                              Great over rice, pasta, or wrapped in tortillas.
