I had chicken enchiladas for dinner. We had beef tenderloin, rum rolls, egg casserole, fresh fruit & lots of booze for brunch though. That was the only traditional meal. The enchiladas were exceptional though.
Had a bunch of randoms over today since we are without family until we make the trek to KS in a few days.
My menu:
Beef tenderloin (cooked Cuban style thanks to my neighbor Julio)
Twice baked potatoes
Roasted asparagus
garlic rolls
Salad
Shrimp cocktail
Brie
Chocolate cake
Carrot cake
Creme puffs
oh, and lots of local/regional wine & beer. The others drank the hard stuff but I passed based on last weekend's sloppiness. I don't know if you all know this...but I should probably tell you that I have three kids. I gotta keep it responsible.

Meh...I am over him. He showed up today in a velour track suit, wife-beater tank top, and a gold necklace with a shark tooth on it. I like Cuban, but I don't like THAT much of Cuban. He sort of reminded me of a grown-up Jefe.

Wifey cooked biscuits and gravy and eggs for breakfast this morning, and I chased that with a glass of Woodford before heading to my Mom's for basically the same fare we had at the inlaws.
I made lasagna for Christmas Eve for my family. It was a nice change from the other Christmas meals we have been getting (not to complain, but nice to mix it up).
