Slice em thin, batter them in flour with some spices, deep fat fry. Cocktail sauce

Some Okie friends of mine got a Nigerian co-worker to eat some without telling him what they were. He was a bit upset afterwards. I think that's how most non-ag people have their first calf fry experience.

Pretty much the only way to eat them. Like a lot of fair food, they're an "eh, why not?" food. I will say that as a kid, I witnessed snippin' day on the family farm. It consisted of a bucket and a sharp pocket knife.
