When are you going and how long are you staying? Business or pleasure?
Stay at the Shangri-La, the service and amenities are second to none. They have a nice waterfront walkway there although don't try to go running along the waterin the morning. You'll be coughing from the pollution if you're not used to it.

For pleasure. 3 days and nights. I definitely want to go see a horse race or two and foodie it up. I'll be getting some suits tailored in Singapore, so I think some cigars and scotch at the Hilton are in order. I'll check out Shangri-La.
Definitely go to Victoria Peak. Check out the markets. Eat dim sum at City Hall. I haven't been there since '96, so I imagine a lot has changed. My aunt has a blog chronicling her life in HK (http://marathonangel.blogspot.com/), if you're so inclined. She's a pastor so a lot of her content is religious in nature, but she also posts about their excursions around the area.
I stayed at the JW Marriott at Pacific Place, but there are a ton of nice hotels there. The city is easy to get around in and the subway is easy to navigate. Shangri-La, as noted, is second to none.
